Back from San Francisco and inspired by all the adventurous ice-cream flavours I tasted, I started experimenting at home. Green tea and elderflower turned out to be my favourite combination.
After tasting the original Bakewell Pudding in Bakewell itself (which is actually made with puff pastry), I came home inspired to make my own version — as a tart, of course. Almond, cherries and shortcrust pastry, just the way I like it, best enjoyed with a strong cup of coffee.
Small, joyfully unnecessary bakes made just because I felt like it. These berry meringue tartlets were created in Windsor, caused mild flatmate drama, and remain one of my favourite tiny desserts — perfect for Easter or any day that calls for a tartlet.
A broken oven meant no baking, but it didn’t stop dessert. A small experiment with no-bake cheesecakes, made to fit little cups, simply because smaller felt cuter.
Christmas cooking is something I look forward to every year… unless everyone else gets there first. A slightly reluctant bake, a lot of eating, and one apple, walnut and poppy seed pie I was rather proud of.
